Good day! As you are reading this, we are on vacation making our way down the US West Coast. I am writing this post while sitting around the corner from Seattle’s Pike Place Market. So far, we are having a fabulous time. I promise to tell you more as soon as we return.
Have you used hemp seeds before? They are a real nutritional champ. You can sprinkle them on yogurt, salads, and even add them to baked goods.
Hemp Seed Pesto (+ Pasta Recipe)
Hemp seed pesto:
- 4 cups fresh basil leaves
- 1/3 cup >hemp seeds
- 1/2 cup olive oil
- 1/2 cup grated parmesan
- 2 garlic cloves
- Salt, to taste
For the pasta:
- Whole-wheat pasta, for 4 servings
- 1 recipe of hemp pesto, see above
- 1 pint of fiddleheads
- 1 small bunch of asparagus, chopped
- Shaved parmesan, for serving
For the pesto: Combine all ingredients in a food processor, and process until smooth.
For the pasta:
Cook pasta according to package instruction. Drain and return to pot.
Meanwhile, in a large pot of boiling water, boil the fiddleheads for a minimum of fifteen minutes. Important note: fiddleheads are poisonous if eaten raw.
Steam the asparagus for 3-4 minutes.
Add the hemp pesto and the vegetables to the cooked pasta and stir to combine. Serve immediately topped with shaved parmesan.
