My sister Caroline is a superwoman. By that I mean she works full-time, has a successful marriage, is raising two talented and sporty daughters, cooks healthy meals from scratch every day, and still manages to train and run a half-marathon every few months. It’s like her and I live in different time dimensions!
I also used to be a runner. Not like Caroline, but I averaged 20-25 km per week for a while. I was happy with that. It made me energetic, lifted my spirits and helped me manage stress. Now, after months of sporadic running, I am finally trying to get back into it. And after a summer run, what better way to quench my thirst than lemonade? I’m sure Caroline would agree.
Honey-Sweetened Lemonade (serves 4)
- 1 cup of warm water
- 2 cups of cold water
- 3 tbsp of honey
- 4 lemons (3 for juicing, 1 for garnish)
- Mint
- Ice
Juice the lemons and sieve out the seeds and pulp. Set aside. In a pitcher, stir the honey into the warm water until dissolved. Add the lemon juice and the cold water and stir well.
Fill each drinking glass with a lot of ice, a couple slices of lemon, and pour the lemonade into it. Top it with a fresh sprig of mint. For a fun and colourful lemonade, add some frozen blueberries. Enjoy!
