I love nuts. If I didn’t exercise any self-control, you’d find me eating nuts all day. Pistachios are possibly my favourites. This might come as a surprise to you given that this blog contains no pistachio recipes whatsoever. But it makes perfect sense to me. I eat them all before they have a chance to make it anywhere else.
Lucky for me (and you), nuts are healthy. Yes, they’re high in calories and fat and they should be consumed in moderation. But they contain the good kind of fat – the kind that is helpful to your heart (unsaturated fats + omega-3 fatty acids).
Today’s recipe for pecan-hemp balls provides a delicious boost of healthy fats and dietary fiber. Pecans, hemp seeds, flaxseeds and wheat germ are all united into this one powerful snack. Savour, guilt-free!
P.S. More guilt-free treats.
Pecan-Hemp Balls
- 1 1/2 cups pecans
- 1/2 cup wheat germ (use quick oats if gluten-intolerant)
- 1 tbsp flaxseeds
- 1 tbsp hemp seeds + 1/4 cup for rolling
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp salt
- 1/3 cup apple butter
- 1 tsp flaxseed oil
Process until you get a crumbly mixture.
Transfer the pecan mixture to a medium bowl. Add the apple butter and the flaxseed oil. Stir well to combine.
With clean hands (and a cookie scoop if you wish), roll the mixture into even-sized balls.
Measure 1/4 cup of hemp seeds into a shallow bowl.
One by one, roll each ball into the seeds to coat them. Voila!
Store at room temperature or in the refrigerator, as you like. Either way, these pecan-hemp balls won’t last very long!
